So when I toggle Bold/Italic or Underline, I know that from that point on the effect will be in force. I can also select text and then press the respective buttons to get that done after the fact.

However with the font-color-button, I can only do it "after the fact".

This is somewhat hinted at via the icon, but the user is trained to not expect it, because all the icons to the left of it (bold, italic and underline) work both ways, whereas the font-color-button works only one way.
I actually already shot a sarcastic video, where I just clicked it, wrote some text and said "excellent feature, very responsive..... don't know what it does, though" till it dawned on me, what was going on.

As you may have guessed, adding colors is not a standard Markdown setting. You can manually start/stop a color setting mid sentence with some span tags.

For example:

The :{quick brown❂}: fox jumps over the :{lazy dog❂}:

❂ = the color image that you'll see in TheBrain notes
